Yummy Mayo Chicken

This dish is the number one reason I make mayo!


So easy, yummy and great for Winter with some steamed vegetables as per the image or in Summer with a nice fresh salad.

You will need the following ingredients:


(makes enough for 2 - 4 people depending on serving size)

500g chicken breasts or thighs

1/2 cup mayonnaise (add more if you like lots)

2 Tablespoons wholegrain mustard 1 cup of grated tasty cheese or other of your choice Butter or oil for frying

Method:

Cut up the chicken breast into smallish cubes approximately 3cm wide.


Fry in a frypan on medium heat in butter or oil until cooked to your liking.


In a bowl mix the mayonnaise and mustard together. Add 1/3 of the grated cheese and the cooked chicken and mix well to coat the chicken pieces in the mayo mix.

Spoon servings onto an oven proof tray, sprinkle remaining grated cheese on top.


Place under grill until cheese melts and browns.


Serve immediately using  spatula to lift the mayo chicken servings off the tray and serve with vegetables or salad or just eat it by itself. 


Really simple, easy and quick to make.


It's also nice placed on a toasted piece of rustic style bread and you can add other toppings to your taste as well. Maybe try some chilli, avocado or bacon?
